The alternate worlds you could end up in are somewhat predictable after a while somewhat randomized still, so you have to make statistically likely choices? For example maybe in one world it’s like a prison planet and you’re being punished for your past in the endless world, and maybe the other is like a limbo space
Charting your course on a star map to get to quest spots and then back to complete the quests in the endless mode

Civilization simulator where you have to go back through the ages again and again correcting the problems you caused as a society and trying to avoid them with your future knowledge, like stopping global warming before it gets bad, eliminating the causes for each world war before they occur, etc.
Each time you die you get reborn into a different time period and have to face the new consequences of your actions in the past.

Premise: The CDI (Cosmic Debris Initiative) is offering warrants and collection quotas for individuals and agencies that collect space junk that is cluttering the current habitable star system. The protagonist will be paid a small sum for the amount of debris that they collect, but the real industry comes from selling products at the Bazaar or the Black Market, searching for particular items side quest style in order to develop relationships with the locals, and trying to pay back your loans and either evade the space bureaucracy’s painstaking legalism, or escape jail if you do get tangled up in their mess.
Meanwhile you’ll be filling out your star map to find new locations and hopefully a purpose for your life within the main questline. The protagonist was part of a group of individuals sent into space, but unfortunately the data payload that held their memories was lost along with their identification. Maybe the main questline could do with trying to find the wreckage of the data cargo ship that should still contain your memories. Possible travel through wormholes or black holes could change what dimension you experience the world in or perhaps change the world around you entirely.
